So I officially tried my first recipe on my way to a completely vegetarian diet. It turned out awesome!! You can find the recipe at Apron Appeal The only mistake I made was buying a small amount of asparagus otherwise it was excellent! I almost had the kids try it too!! A few more introductions and Im sure they will be sold as well.
I have decided to start this blog to document my journey of transitioning to the western diet to a plant based and whole grains diet. I will also document all my findings and knowledge I obtain through this journey. This information is not intended to trump any medical advice. This blog is strictly to document.

The Journey Begins
So what has sparked my interest in this new transition in my life is documentaries. It began with the Food Inc. documentary that opened my eyes to the true underlying reasons for our meat industry and the effects it has on our health. The next documentary I watched was FoodMatters which opened my eyes to the realities of the pharmaceutical companies and the reality of the detrimental motives they have on us as consumers. The most recent documentary I am currently watching is Forks over Knives. This one really focuses on the correct diet and what that diet can do for us. I have decided to slowly transition into a new diet for the well being of my family and I. I will begin posting on each vegetarian recipe I try and the facts I have learned from my research.
